There’s something berry special about all things berries this silly season! My mother’s Christmas strawberry pavlova roll is one. Whilst you can treat your-ELF with such festive desserts, for a very Berry Christmas these raspberry gelatin gummies deserve a go! Packed with collagen and gut loving goodness, they’re easy to make and only contain a handful of ingredients. They are also quite the treat for children… especially if you play around with mould shapes, and different coloured fruits.

INGREDIENTS

  • 1 cup frozen raspberries
  • ½ cup freshly squeezed lemon juice
  • Sweetener: 4 tablespoons raw honey or maple syrup
  • ¼ cup grass-fed gelatin

METHOD

  1. Blend the thawed raspberries and lemon juice in a blender and blitz until you reach a smooth consistency.

  2. Place the mix in a pan on medium heat. Stir.

  3. Add the above sweetener of choice and grass-fed gelatin to the pan.

  4. Slowly stir on low heat until a smooth consistency is achieved.

  5. Let the mixture cool down.

  6. Pour the mixture into silicone moulds using a tablespoon.

  7. Let it set in the refrigerator for 2 hours.

  8. Remove the gummies from the moulds and serve.
