As a child, my Grandma would turn to an age-old remedy to help us if we ever had an upset stomach. It was always her first line of defense to help ease any tummy troubles. I gather this recipe was used by generations before her, particularly as one of the key ingredients, the Bay laurel (Laurus nobilis), grows substantially on the Croatian coast and islands.

Ingredients

 

  • Rice
  • 1-2 Bay Leaves
  • 1-2 cups Water
  • 2-3 Tbsp Extra Virgin Olive Oil

 

 

Method

 

  1. Soak white rice in a mixing bowl with water. Ensure water covers the rice. Leave at room temperature overnight.

  2. Drain the water, and rinse the rice in clean filtered water.

  3. Boil rice in 1-2 cups of water.

  4. Add 1-2 Bay Leaves.

  5. Add a splash of Extra Virgin Olive Oil.

  6. Stir occasionally.

  7. Once the rice has cooked, remove the Bay Leaves and serve.

 

The bay leaf has been used for centuries not only for a kick of flavour when cooking, but to help with digestion, amongst other potential benefits. Read here to find out more!
